Landgasthof Adler in Rosenberg, not far from Schwäbisch Hall, is one of the best country inns in Germany.
The Bauers have transformed the country inn, which has been in their family since the mid-19th century, into a real gem that is a perfect marriage between the traditional and the modern. This is echoed by Josef Bauer's cuisine, immaculately crafted using the finest and usually locally sourced ingredients. He wows with innovative ideas, contemporary flavour accents and transparent flavour combinations which make his cuisine so distinctive and worth discovering. No wonder the Landgasthof attracts food lovers from far and wide. Bauer challenges his diners but not too much – his dishes tend to be simply prepared, sometimes tinged by irony, with brilliant accents that allow the food to shine in a fresh light.
For the amuse bouche, Bauer usually serves an exquisite Swabian or German speciality in miniature, such as lentils with spätzle noodles or his amazing pike-perch currywurst. One unmissable starter is his lukewarm vegetable salad , with just the right amount of vegetables carefully and individually cooked, in a marriage with a succulent red mullet. Another standout dish is Bauer's tomato – tomato – tomato, a contemporary, transparent elucidation of the character of different varieties of tomato, brilliantly faceted with wild herbs. Main courses not to be missed include Bauer's tripe dishes and his Hohenlohe rib of beef with onion confit and potato purée , which is to die for. Then, to finish, one of his excellent soufflés – and all's well with the world...
