Densely packed wine bottles on the illuminated side wall of the Rutz's wine bar create a wine-cellar atmosphere in this bright space in the centre of Berlin. As well as serving some 800 varieties of wine, it also offers visitors a chance to order selected dishes by Michelin-starred chef Marco Müller – lighter meals for smaller budgets. Those looking forward to the full gourmet experience can take the onyx staircase leading up to the Rutz restaurant on the next floor.
Head Chef Müller has created his own signature cuisine style here, revolving around sustainability, authenticity and first-class produce. And, to ensure there are no compromises, he is even on hand to give advice when his ingredients are being produced, working with farmers to develop special cultivation plans and coordinating closely with local cattle breeders. He modestly describes this holistic approach to his craft as "romantic cuisine".
